Mexican tortilla casserole


Mexican tortilla casserole*


°1 lb. meat

°1/2 cup onion, diced...

°1 box of taco seasoning mix

°2 cups grated cheddar cheese

°1 refried beans (easy to spread if you heat them in the microwave)

°1 cup prepared rice (I used rice flour)

°A can of Mexican corn (drained) only uses about half a can

°4-5 large flour tortillas

°8 ounces thick sauce (your choice of mild or hot)

*How to make it :

Spray a springform cake tin or casserole dish with cooking spray.

- Minced brown beef, onion and strainer.

Add taco seasoning and cook according to package direction.

- Put 1 tortilla in the bottom of the baking dish and spread a third of the beans on it and one third of the meat and sprinkle a little cheese on it.

-2 tortilla layers, 1/2 rice, 1/2 salsa, 1/2 corn and cheese.

3 tortilla layers, 1/3 beans, 1/3 meat, cheese.

4 layers of tortilla. Beans, meat, corn, rice, salsa and cheese.

Bake covered with foil at 350 degrees for about 40 minutes and bake for 10-15 minutes. Leaving it for 5 mn before slice. After baking with sour cream, diced onion and shredded lettuce if desired.
